BERGENFIELD, N.J. — Shurok Hussein of Bergenfield is making the same recipes that her mother used to cook for her.

The mom of two says chicken wings fried with lemon and spices along with Middle Eastern salad is equal parts simple and delicious.

She chose to serve it Thursday with roasted asparagus and Arabic-style rice on the side.

CHICKEN:

You'll need:

  • chicken wings
  • 1 Tbsp. minced garlic
  • 1 packet Sazón dry mix
  • 2 Tbsp. of Adobo (Goya)
  • 1 Tbsp. black pepper
  • 1/2 Tbps. garlic powder
  • 1 lemon

Directions:

Add all ingredients to chicken in large bowl and mix well. Fry it on the stove in oil for 10 minutes at a high heat covered. Remove from pan and let cool.

SALAD

You'll need:

  • 1 large cucumber
  • 1 tomato
  • 1/2 cup olive oil
  • pinch of salt
  • 1 lemon
  • parsley (for decoration)

Directions:

Mince cucumber and tomato as small as you can and put in bowl. Mix in olive oil, salt and spritz with lemon. Mix and top with parsley (see photo above).
